Default Dinner Ideas

I'm starting a new thread for those nights when we can't come up with dinner ideas. Your ideas can range from easy to difficult, 20 minutes to an all day crock pot meal. I think it would be helpful to estimate the prep & cook time.

We're having tostadas. They're as easy as frying corn tortillas, opening and warming a can of refried beans, sprinkling with cheese and covering with lettuce and homemade salsa (which has very chunky tomatoes in it).

I'd prefer them to have my own chili beans on, but I haven't found an entire day to cook them as yet.

Well, it didn't turn out as I planned. I peeled and cut up a bunch of peaches from our tree and then put cinnamon sugar on the fried tortillas. I put the peaches in the tortilla and topped with whipped topping for a peach taco! It was like a peach pie and way yummy!

My kids love "taco soup". You can make it from scratch w/your own "Mexican" spices or just add a package of taco seasoning. I don't really use a recipe, but it has:

Chicken broth & cooked chicken (or beef broth & ground beef, or just vegetarian)
A can of beans --we prefer black beans, but pinto, kidney, red & chili beans work fine.
If I'm making vegetarian, I add two cans of beans of different varieties.
A can of corn
A can of diced tomatoes or tomato sauce

I also add whatever I feel like, such as green beans, sauteed onions, hot sauce, green chilis, or even rice.

Serve with sour cream, cheese, and chips & salsa.
