| I've only done this once because you have to be really prepared but it worked great. I bought lettuce and broke it up in advance and had all the fixings for a great salad. Then when lunch came all I had to do was grab a handful of lettuce, cut up meat, add my veggies and on I went. I just don't have enough time to do that anymore.....actually it's more of a priority issue. I've got to work on that! How about you, any ideas that work great for you? |

| Well I have worked on this for a while and I think I have come up with some good ideas that are quick. I cook 4-6 servings of instant brown rice and put it in the fridge for the week. You can actually make a few meals with it. With the rice I usually eat tuna roll ups. It's very easy. I usually buy the seasoned packets of tuna. My favorite is Starkist sweet & spicy and then I roll it up with the rice. Sometimes I add a few slices of white cheese. Takes about 5 minutes. Great source of protein and complex carbs. Egg roll ups are good as well. You only need tortillas and maybe some salsa. Sometimes I make egg sandwiches with mustard and flaxseed oil mayo Spagetti is very easy ($1 for sauce, .50 cents for pasta).. Make a big pot on Monday and eat it WITH your kids for the next couple days. Using durum wheat spaghetti noodles. I also cook about 18 boiled eggs for my husband, myself and my daughter during the week. Carrot sticks and wheat thins. String cheese and whatever else. It's a snacker lunch with natural foods. Other rice recipes can be whatever you want... Stir fry veggies and some reduced sodium soy sauce with rice. Canned chicken and rice with a splash of wingers sauce (no fat and not much sugar) Just some ideas. I think I have more but I can't remember now |

| Those are some great ideas. Mine is really simple but maybe someone will like it. I have just discovered Healthy Choice lunch meat. That with some whole wheat bread is a filling and light lunch. Soups are also nice and easy with the bonus that they are low in calorie and usually contain veggies. |
