| I just have to give a big THANK YOU to diaminha for telling me about cooking mini brownies in the microwave!!! I know you told me about it a while ago but I just tried it tonight and we loved them! We only used water and made a small serving. It was delicious. I wasn't sure if it would taste moist without oil but it was perfect. You would never know eggs and oil were missing. My new favorite treat! I am also going to try a small serving of lemon poppyseed muffin mix. mmm mmm, I love poppyseeds! |

| I missed Dia's healthy food idea night. I'm so bummed! Can one of you walk me through this micro-brownie thing, Dia or AP? Unless it's posted somewhere already and I've just missed it somehow. Yum. My mouth is watering. |

| Thanks for asking! I guess DiaMinha hasn't seen this post yet. Anyway, the micro brownie is really simple. You just buy the store brand fudge brownie mix (I like alberstons) and instead of making all the brownies you only make one or however many you want (I could see myself eating 3 or 4 helpings You don't add the eggs or oil, only water. And actually the amount of water depends I think on how thick you want it. I just poured until it seemed like how the entire box would look prepared. I cooked it for 1 minute and it came out perfect. I used my baby's tiny microwave safe bowl so that it seemed bigger once it was done. And I ate it with whipped cream... Probably not the healthiest but just a dab only. |

| I read it, I guess I just forgot to reply. I do that sometimes when I get interupted. This was actually posted on an earlier thread about cravings and what to do about a sweet tooth. That is probably where amber originally saw it. The actual recipe is 2 T. of brownie mix and 1 T water. Stir well, and cook in microwave until there is no wet spots on top bigger than a quarter. Eat while still warm. There is actually a brownie mix called No Pudge with a little pink pig on the package. They are so good, fat free, low in calories and high in fiber. Macey's carried them for a little while, but I haven't been able to find them in Tooele since. I have heard you can get them at Cosco. You actually mix in fat free, light vanilla yogurt instead of water and can also make single servings. If you want to use a regular brownie mix, but add some fiber you can stir in a teaspoon of Fiber Sure (found in the fiber supplement aisle at Walmart) and it won't affect the texture of the brownie at all. Cool whip is actually a good topper. It is mostly air and if you are using a low fat or fat free is low in calories. This also works for cake mixes. Oh and Amber, you welcome. | I just wanted to let you know, thanks to this post I made a single serving chocolate cake in my microwave last night. Even though it was really good it was not as good as doing a brownie. Especially the No Pudge brownies. If anyone has seen the No Pudge brownies around town, like maybe Albertsons, because I just don't shop there, please let me know. I would make I trip there and use that silly card if I have to, just to get a hold of it. Not only is it the best brownie mix ever, it is the only one I know of that does not contain any hydrogenated fat, which is the very bad trans fat that we should not be eating in any amount. For all you peanut butter loving friends out there, try it with a dab of peanut butter. Just mix up your batter and than drop a teaspoon or so of peanut butter in the center and pop in the microwave. It is oh so yummy and a really good substitute for a high fat, high calorie, no nutrition, REESES peanut butter cup. Which if you didn't know, recently made the list as the worst candy bar you can eat, health wise. Which of course, just happens to be one of my most favorites. Dia |

| Yep - so, I did this micro-brownie thing today at work. YU-UH-UM! Mine came out a bit cake-like, though (and it looked kind of funny). Is that normal? I didn't measure it, because I didn't have the tools. So, I just eyed it like AP said to do. Maybe I didn't "eye" it right. Anyway, I was still impressed. So easy, and tasty! Thanks for the idea. I haven't seen the "pudge" kind you've been talking about Dia. Sorry. I just bought a small Betty Crocker pouch for $.50 at Alb's, so I can keep it at the office. I figure I can make a bit any time I need a little chocolate somethin-somethin, during the long work hours. I have to admit, though, it seems a little contradictory to do Lean Cuisine as the main course. teehee. Oh well. I guess it's still slightly healthier (and cheaper) than eating out. |
