BBQ Pork Salad

Last week I bought boneless pork ribs and cooked them in the crock pot in a bottle of BBQ sauce for our Sunday dinner. I didn't know what to do w/ my leftover pork - it's really, really good meat. Anyway, I looked on-line for recipes using left over BBQ pork and found a suggestion to use it in a salad - which I did. It was really good. I made a very large bowl of it and my family ended up eating the whole thing.

My ingredients included what I had on hand:

Red leaf lettuce
Spinach
tomatoes
snap peas (I just broke them in half and threw them in)
cheddar cheese, grated
left over BBQ pork, shredded

I also made cornbread and it complimented the salad quite nicely.

The dressing for the salad was Ranch mixed w/ BBQ sauce and it was really, really good. One of my boys substituted salsa for the ranch and loved it. Another son said I should put guacamole in it next time. I think it would also be really good w/ sour cream and black beans and maybe even rice as well next time.

Anyway, hope this helps anyone who ever wants to know how to use their left over BBQ pork.
