Smile Christine's Artichoke Dip

Here's another "family hit" recipe I just tried. Great for an appetizer and/or a fun party food.

CHRISTINE'S ARTICHOKE DIP

Ingredients:
1 package (8 oz) cream cheese softened
1 cup Mayonnaise
1 cup sour cream
1 cup grated Parmesan cheese
2 cans (14 oz) artichoke hearts drained and chopped
2 cloves garlic crushed
1/2 tsp fresh dill (optional)
**

Directions:
Preheat oven to 350
Combine all ingredients in a medium mixing bowl. Pour into oven-proof container.

Bake for 30 minutes, stirring once or twice.


DOUBLE YUM!

I halfed the recipe (because my family is small, plus I just wanted to use the dip as a fun side-dish to spaghetti). I sliced and toasted baguette style (skinny) french bread loaves under the broiler. We also used chips.

** I omitted the dill, added some mozzarella cheese, and a tiny bit of canned spinach (pressed dry).

I will definitely be using this recipe again

My sister-in-law made something like this, but instead of putting into a baking dish she pressed some kind of dough into minature muffin pans (like won-ton wrappers maybe) and then spooned the artichoke mixture into them and then baked. They were delicious.

Oooh. That sounds good! Maybe you could find out what she used for both the outer casing, and stuffing. I'd love to try that! Did you eat them as a meal, or a side dish?

Also, (in regards to the dip) I'm betting you could use light sour cream, light mayo and light cream cheese to make it a bit more healthy. I doubt it would take anything away from the taste. Dia, you're always good about trying healthier variations. You inspire me.
