| Okay, SSG, I heard your husband whipped up a great batch of fresh salsa the other day. I'm interested in the recipe. I also heard some of you make fresh salsa and then freeze it. Would someone mind elaborating? I've never done salsa...ever....so I'm wanting a little 101 before diving in. |

| I don't have measurements for anything. Everything is just according to your preference and tastes. Put everything in blender or food processor. Blend or process until it is the way you like it. Blend less for larger chunks or more for smaller. I like mine with smaller chunks. Tomato Red Onion Green Pepper Cilantro Jalapeno Pepper Lemon Juice Seasoned Salt (including spices Chili Pepper, Black Pepper, Celery Seed, Nutmeg and Coriander) Paprika Garlic I have never froze this recipe, but I don’t see any reason why it couldn’t be. Play around with your ingredients to see what you like. I like a lot of tomato and just about the same amount of onions and peppers combined. I like mine mild so I use just a little jalapeno pepper which I make sure I chop up very fine before putting in the blender to prevent getting a big chunk in one bite, which can really burn. I like quite a bit of garlic, maybe 4-5 cloves in a blender full. Dia |

| Yes in the blender. You want to make sure you have a good one though. If it can chop ice, then it should be able to handle this recipe. I would quarter everything before tossing it in. Just gives a little extra boost so the blender doesn't have to work so hard. I have a brother-in-law that just chops everything and mixes. The chunks are a bit bigger that way, but it still works. | Here is my YUMMY receipe for FRESH SALSA: 12 1/2 lbs Roma Tomatoes-can use any 2 Onions 2 Bell Peppers 2 Anehiams 3 Jalapeno Peppers 2 1/2 Hubanro Peppers(Chili Serranos) 1/2 Bunch of Cilantro 2 1/2 TBSP Season Salt 2 TBSP Salt 2 TBSP Black Pepper 2TBSP Lemon Juice 1 TBSP Garlic If you have ever tasted Macey's fresh salsa when they used to make it (I'm not sure if they still do put this is from them.) This is sooooo Yummy it's one of my favorite reciepes. Just chopp everything up in a food processor or blender and voila there you have it fresh salsa. I have also put it in quart jars and froze them. It's just as Yummy as the day you made it. It's just a little runnier. Good luck in salsa making. |

| my hubby makes his by chopping: fresh tomatoes, jalapeno peppers, spices (not sure what, I'm sure cilantro and garlic) and he likes to add chopped cucumbers- they cool it down just a little. It is really yummy, but I've never frozen any. That might be a good idea! |

| I absolutely love this time of year, for the fresh salsa alone. I like mine chunky, though - so I just hand chop everything. Takes a bit more time, but it's the way my family loves it. I don't use measurements, either. I just throw in a bunch of chopped tomatoes, green (red and yellow) peppers, diced onions (red are my fave), pressed garlic, jalapenos or habaneros (sp?) and don't forget the CILANTRO!!! Mmmmmm. I like the cucumbers or celery too - for extra crunch (and filler). We use fajita seasoning mix, and crushed red pepper seasoning (if you're feeling extra spicey). A little squeeze of lime is good for flavor and it's a natural preservative. The main thing to remember is that anything goes! You really can't mess it up. My favorite part about making it is the "taste testing" that we do once everything is in there, and we're just trying to decide if the ratios are right. I have never put mine in the freezer, though I will DEFINITELY try that. Thanks for the suggestion! I usually just snack on my salsa for a few days, with tortilla chips. Then when I'm tired of that, I throw it in the crock pot with some chicken and cook my favorite Mexican chicken dish. I also love to grate a bunch of cheese and put the salsa on some chips (add some shredded chicken, or beans), and pop it in the microwave or oven for some "deluxe" nachos. My mouth is salivating just thinking about it. Okay, okay...I say that every time we talk about food around here. |

| Oh yeah, lime juice! DH uses that, too I think. We prefer chopping, too, MM. sounds so yummy. I've really missed those tomatoes this year- we didn't get a garden in and it's so sad! |
