| My family absolutely LOVED this meal, so I thought I would share. I felt like I was eating something ordered from the Olive Garden. YUM! Enjoy. Herbed Artichoke Cheese Tortellini 2 cans (14-1/2 oz each) Italian diced tomatoes 1 jar (12 oz) Marinated quartered artichoke hearts 2 pkgs ( 9 oz) refrigerated cheese tortellini 1 large onion chopped 1/2 cup minced fresh parsley (I actually just used dried parsley) 2 tsp dried basil 2 tsp minced garlic 1/2 tsp dried oregano pinch of red pepper flakes 1/3 cup olive oil 1 can sliced ripe olives, drained Parmesan cheese to sprinkle on finished dish Drain tomatoes, reserving 2/3 cup juice, set aside. Drain artichokes, reserving 3/4 cup liquid, chop and set aside Cook tortellini according to package directions. Meanwhile, in a large skillet, saute the onions, parsley, basil, garlic, oregano and pepper flakes in oil for 4-5 minutes or until onions are tender. Add the reserved tomatoes, tomato juice, and artichoke liquid. Bring to a boil. Reduce heat, simmer uncovered for 10-12 minutes or until slightly thickened. Drain tortellini and add to tomato mixture. Stir in olives and artichokes. Heat through. Sprinkle individual servings with Parmesan cheese. Biscuits 3 cups Bisquick 3 Tb snipped chives (opt) 2/3 cup water 2/3 cup sour cream 1/2 cup grated cheese In large bowl, combine bisquick and cheese and chives. Add water and sour cream. Stir just until moistened. Drop by heaping tablespoonfuls on a baking sheet sprayed with pam. Bake 450 degrees for 8-10 min. Serve warm. Makes 16 biscuits Hope you all enjoy this as much as we did! | The thing I loved most about this recipe was that it didn't need meat or seafood, and everybody enjoyed it (maybe my kids enjoyed it MORE because there was no meat). Nearly all of the main dishes I tend to make have some kind of meat in it. Old dog, new tricks. Ya know? Anyway - on the flip side...DH believes that garlic-butter sauted shrimp would taste excellent in it. I have to agree. That's probably what we'll do next time. If we did it for a family gathering, party or pot-luck item...I would probably make one set with shrimp, and one set without. |

| I made this tonight, and it was a total HIT!!! My family LOVED it! The only glitch that I had was that I couldn't find the refrigerated tortellini at Walmart, but I used frozen and it turned out just fine! Thanks MM! |

| I made this tonight. I prepared it w/out one alteration. Everyone but my picky child really liked it. (I couldn't even get him to try it.) This meal was really fast and easy to make and it wasn't too expensive. Thanks again for sharing the recipe w/ us! |

| I finally made this last night. We were at a family reunion this past weekend, so I couldn't make it earlier. It was so yummy! My kids loved it too. This is definitely something I want to make again. |

| Does anyone know where I could get some whole wheat tortillini? Seeing all the reviews makes me want to try it. Oh and preferable stuffed with mushrooms or spinach instead of cheese. |

| I'm glad it went over well with your family members (other than the picky ones). I've been craving this meal lately, but figure I should wait atleast another week or two before I make my own family eat it again. ehehee. Diva, I would bet your bread recipe would go really good with this. I'll have to dig up that recipe and try it next time. I have no idea where you can get whole wheat tortellini from. I'm not sure I would have noticed it, though, had it been at the grocery store - because I tend to overlook whole wheat. I did find some refrigerated varieties at Macey's close to the cheese section (they looked REALLY big and delicious). Made me wonder if the refrigerated kind would have made it even more delicious. I originally used the frozen kind, too (MPS), just because that was all I could find at the time. The refrigerated kind seems a little pricey though, everywhere I've found it since then - so I think I'll stick with the off brand frozen bags. Anyway, I'll have to look around, Dia. |

| I can tell you it is wonderful with the home made bread. We had it last night with yucky store bought stuff. Tonight however (left-overs) we got the GOOD stuff, and it was marvelous! BTW, this meal is just as good warmed up the 2nd day. |

| I actually found some whole wheat tortellini. The problem being it is still stuffed with cheese so still very high in fat. However, there is lots of fiber so maybe every once in a while wouldn't be so bad. For anyone else interested it is made by Buitoni. There are no stores in the area that carry it, but I'm going to see about putting in a request form at Maceys. They are really good about getting things in for me that they don't normally carry. |
