| I just bought some pork tenderloin, and I have no idea what to make with it. Some of the packages are mesquite barbeque flavor, and the others are plain. What do I do with it? |

| I have a great recipe for pork tenderloin. It is very simple but tasty. I used to make it other ways until I tried this recipe and now my family loves this one more. 1tbsp Salt 2 tbsp olive oil 4 cloves of garlic 1 tsp dried thyme 1 tsp dried basil 1 tsp rosemary Preheat oven to 450 degrees. Get a casserole dish or pyrex dish and place a metal rack in it at a 45 degree angle. This is the key for this recipe. Combine ingredients in a small bowl and rub onto the meat. Roast the meat for 30 minutes at 450 and then reduce to 425 for an additional hour. |

| YUM! I always love crock potting schtuff! Your pork will be GREAT (and very tender) that way. Thanks for asking this question RAR. I have some, too, in the deep freeze. If I were to use the other suggestion, IMA, what do you mean by 45 degree angle for the metal rack? Sorry, it's not making sense to me. |

| I know it sounds weird but it works. Lay the edge of a cookie sheet on one side of the pyrex ( I use a glass one) and that way the pork is not touching the bottom of the pan. I am not sure why it is done like this but this is from a Paula Dean cookbook and my whole family loves it. Very rare for that to happen. I like the crockpot idea too. Thanks! |

| Those sound really good. Okay, I don't know much about cooking meat. What do you do with it when you are done cooking it? Do you slice it? What do you serve with it? |

| I let the tenderloin rest for about 10 minutes before slicing it and it helps the juices stay inside. I usually serve it with a veggie and a side dish of rice a roni or potato salad. |

| RAR - that's pretty cute you're giving your hubby a nice welcome home dinner. My poor DH will most likely get a WENDY'S Jr. bacon cheeseburger! That's how domestic I'm feeling lately. And the kicker is, he'll probably have to go pick it up himself. |

| I'm not actually planning a surprise dinner for when he comes back. If I knew that he would be home for sure by dinner, I would. I just don't know what time they will be back. Do you? I just meant that my husband would be surprised when I cook the meat. We don't eat a lot of meat, so this will make him happy! |

| Amy - You said that you don't eat much meat so what do your dinners consist of? Because I have been dealing with not knowing what to make unless it has chicken or ground beef in it. A few weeks ago I did french toast and another day pizza casserole, but actually I put pepperoni and canadian bacon in it so I guess that doesn't count. |

| RAR - I think they're supposed to be heading out of there about 11ish. They were going to try and take one more morning kayak run. But, who knows. They may just want to take down camp and bust on out of there, ASAP! I guess it depends on how tired they all are. I was kind of thinking we'd see them about 3 or 4 this afternoon (just to round up). Maybe it's safest to plan making dinner tomorrow night. I'm interested in your veggie dinners, too. I know you did an Enrichment night on it once, but I only caught half of it. So, I'd love to hear your normal meal ideas, too. My mind thinks in terms of poultry, mostly. Occasionally I'll do ribs, fish, steak or roast. But, it's a very rare occasion when I don't have some type of meat. And I'm sure my DH gets tired of chicken. |

| Right now I have no idea what we are eating. With the heat, I don't want to cook, so we are eating simple meals. I love to eat pasta (sometimes with meat, sometimes without), stir-fry, and soup. Of course we eat a lot of other things, but I can't think of them right now. When I cook with meat, I only use half of what the recipe calls for. I do cook with meat at least half or two thirds of the time, but not a big quantity and not very many different kinds. I just don't like the taste or texture of very many kinds of meat. |

| The Enrichment class I taught was about nutrition and exercise. I didn't get in depth, but I gave ideas of things that I do to eat a little better, or things I have heard other people do. It sounds like Dia's class would have been more informative for eating healthy. |

| I like the old cream of mushroom soup pork tenderloins. I posted it in the crockpot section, I'm just remembering now...check that out if you want another easy recipe. |
