| Does anyone know a good e'clair recipe they could share with me? I looked on the internet and each recipe was so different I just wanted a tried and true recipe. Thanks. |

| I've never made eclairs specifically, but aren't they just oval cream puffs? If I were going to make them, I'd do cream puffs and make them oval and put the yummy frosting on top. Cream puffs are pretty hard to do wrong, but I can dig out my better homes and gardens cook book if you don't have a recipe for them. |

| I have an eclair cake recipe that is very yummy and easy to make. It probably isn't what you are looking for, but I'll share anyway. Mix up a large box of vanilla pudding Place a single layer of grahm crackers on the bottom of a cake pan. Spread half pudding mix over grahm crackers. Place another layer of grahm crackers Spread rest of pudding mix on top of second layer of GC Place another layer of grahm crackers on top Spread top layer of GC with chocolate frosting. Let set for several hours in the fridge. The GC will soften and you can just slice and serve like cake. It sounds yucky I know. The first time Elder made it for me I almost gagged, (soggy grahm crackers, yucky!) but it is actually very yummy. I made it for a ward function a couple of years ago and it was the first dessert gone. People probably didn't know what it was they were eating. You could cut the calories and fat by using sugar free, fat free, pudding, cutting out the middle layer of Grahm Crackers and than using chocolate cool whip or low fat or light regular cool whip on top. I have also done this with different flavors of pudding. My families favorite was banana and then I layered sliced bananas and strawberries where the second layer of GCs usually goes and then again on top of the cool whip. | Ok! Better Homes and Gardens Cream Puff recipe (note there is an eclairs variation at the bottom, which I didn't know before I started typing...cool, huh?) 1/2 cup margarine or butter 1 cup water 1/8 tsp salt 1 cup AP flour 4 eggs Pudding, whipped cream, ice cream, sherbet, or fresh fruit powdered sugar (optional) In a medium saucepan combine margarine or butter, water, and salt. Bring to boiling. Add the flour all at once, stirring vigorously. Cook and stir till mixture forms a ball that doesn't separate. Remove from heat. Cool 10 minutes. Add egs, one at a time, beating with a wooden spoon after each addition till smooth. Drop batter by heaping tablespoons, 3 inches apart, onto a greased baking sheet. Bake in a 400 oven for 30 to 35 minutes or till golden. Cool on a wire rack. Split puffs and remove any soft dough from inside. Fill with the pudding, whipped cream, ice cream, sherbet, or fruit. Replace tops. Lightly sift powdered sugar over tops if desired. Makes 10. Eclairs: Prepare as above, except spoon batter into a pastry tube fitted with a Number 10 or larger tip. Slowly pipe STRIPS of batter onto a greased baking sheet, making each strip about 4 inches long, 3/4 inch wide, and about 1 inch high. Bake, split, and cool as above. Fill with pudding or whipped cream. Front with Chocolate Glaze. Makes 12 Chocolate Glaze: 4 squares (4 oz) semi-sweet chocolate, cut up 3 TBS margarine or butter 1 1/2 cups sifted powdered sugar 3 TBS HOT water In a small saucepan melt chocolate and margarine or butter over low heat, stirring frequently. Remove from heat; stir in powdered sugar and HOT water. Stir in additional hot water if needed to make of drizzingly consistency. As for the filling, I've used pudding, but I know I've eaten them with whipped cream which has been frozen...I think Patricia Cook made them for an enrichment AGES ago. They'd be SUPER good with strawberries and whipped cream like a strawberry shortcake. The pudding I use is good old cannery pudding, which is slightly stiffer than Jello brand so it holds up better in a situation where you're eating them with your hands. If you don't like the consistency of cannery pudding, stir in a dollop of whipped cream and it will get smoother and softer in consistency. Also...they say it makes 10, but you just have to decide the size you want them to be. I think you can make 20 small ones just as easily and then if you just eat one, you're not going to die of a heartattack tomorrow, because these are NOT low fat by any stretch of the imagination no matter what you put inside. |

| I have also made the Eclair pie (cake what ever you want to call it) that DM makes. This is sooooo yummmmy! It tastes just like an eclair. OHHH my mouth is watering. |

| well I just went looking for chocolate... So I drank a slimfast shake and ate some pasta ALL at 11pm ![]() I skipped dinner then came and read this thread! Big mistake I need one of these |

| Thanks for the recipe. Now that I think about it I think I have tried it before. It was great!! Nice to have the recipe now. I get obsessed about desserts that I haven't tried to cook before and then luckily I will try it a couple of times and I get over the cravings. |

| OH MY GOODNESS!! Where am I going to find chocolate at this time of night??? Dia, I make that too but use variations of puddings and put whipped cream on top as well. I haven't tried it with the chocolate frosting. I'm definately adding that on next time. Everyone raves about it at parties----and it's SOOO easy to make!! It really DOES taste much better than it sounds. |

| Yeah, some Chocolate chips will do in a pinch, but you may need a family council about the raid. That's a serious offense in these parts |
