Default Zucchini Recipe

My brother sent this to me. We tried it and really liked it. The only thing that I would do differently is to cut the squash smaller or cook it a little more, we like ours more done.

Cheesy Zucchini

3-Small/Medium Zucchini cut into 2 inch slices and quartered.
1-small onion diced
2 TBSP olive oil
1/4 teaspoon black pepper
1/2 teaspoon salt
3/4 cup parmesan cheese

In wok or sauté pan place olive oil and onion over medium heat until onion is browned.
Place squash single layer in pan- DO NOT layer squash, if it does not fit do in separate batches sprinkle with pepper and salt.

Cook over medium heat for 10 mins stirring frequently. - (If doing more than one batch remove and repeat with additional squash. Return squash to pan.)

Sprinkle cheese over squash heat on medium for 3 minutes stirring frequently.



This is very good and extremely diabetic friendly!

This is the way I cook my zucchini. I thought I had made it up. I usually slice mine and then quarter, so my pieces are smaller, but I like to cook the onions for 5 minutes and then add the squash and cook just until hot through.

This works really good on the grill too. Just slice the zucchini length wise and brush with olive oil. Cook for a few minutes on each side and sprinkle with the cheese just before taking off the heat.

This sounds so good! I totally want to try it.

And I'll put my annual request out, also...

If anybody has extra zucchini (or squash, peas, green beans, or anything other than tomatoes) from their gardens, I will gladly take them off your hands. I will even "pay" for produce with coupons, babysitting - whatever.

I have a few green onion bunches (for about the next week or two) if anybody is interested in those, send me a pm.
