| Red is a little more meaty and nutty. White is a lighter flavor. I like hard red in meaty, whole wheat bread, or for wheat pearls, but white works better for doing half whole wheat and half white flour to add nutrition to lighter, fluffier, recipes like cakes, brownies, cinnamon rolls, etc. It really just matters what you prefer. If you prefer white bread over wheat, you probably would be happier with hard white. |

| As far as I can tell, most people prefer hard white for breads because it is lighter both in color & texture. Red is more "heavy" and has a stronger taste. I've heard that red supposedly keeps a little better, but when you're talking they both last for 20+ years if stored properly it really doesn't matter. |
